They are ignored, called names, and cast aside in a pile on the plate. I have hidden them in things, and tried to disguise them as much as possible, but I wish I could just put a vegetable on the table and my family would eat it.<br \/>\nEnter okra: the gateway veggie.<\/p>\n<p><!--more--><\/p>\n<p>If you did not grow up in the south, okra is probably some weird alien vegetable that has strange balls in it and&#8230;that dreaded slime.  Yes, slime.<br \/>\nI grew up in<br \/>\nOklahoma, but because my mom was the one in the family who cooked, and she grew up in Wyoming, okra was nothing I had heard of or seen until she met my step dad. I still wouldn&#8217;t touch it.<br \/>\nDid I mention the slime?<br \/>\nEventually I tried it fried, like everyone does for the first time, and realized it&#8217;s delicious!<\/p>\n<p>I still have to disguise it for my family, but I don&#8217;t have to get as tricky.  I can even hide it in plain sight!<br \/>\nLike on Nachos:<\/p>\n<p><a href=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_0437.jpg\"><img decoding=\"async\" src=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_0437.jpg\" alt=\"IMG_0437.JPG\" class=\"alignnone size-full\" \/><\/a><br \/>\nIf you slice them and throw them on nachos they look like jalape\u00c3\u00b1os and nobody blinks an eye.  I have also put them on pizza as well. <\/p>\n<p>Next, I made a stir fry:<\/p>\n<p><a href=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3631.jpg\"><img decoding=\"async\" src=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3631.jpg\" alt=\"IMG_3631.JPG\" class=\"alignnone size-full\" \/><\/a><\/p>\n<p>Stir Fry &#8211; Serves 6<\/p>\n<p>3 cups steamed rice<br \/>\n1 medium onion, diced<br \/>\n2 large carrots, diced<br \/>\n1\/2-1 cup sliced okra<br \/>\n2 tsp ground ginger<br \/>\n1 clove garlic, grated<br \/>\n1 tbsp tamari (or soy sauce &#8211; for those of you who can eat gluten)<br \/>\n1 tsp<\/p>\n<p>Saute onion in olive oil until translucent<br \/>\nAdd carrots, cook until soft<br \/>\nAdd garlic, ginger and tamari<br \/>\nAdd okra and rice and cook until okra softens<\/p>\n<p>This is also vegan. <\/p>\n<p>It also adds great flavor to a hash:<\/p>\n<p><a href=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3835.jpg\"><img decoding=\"async\" src=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3835.jpg\" alt=\"IMG_3835.JPG\" class=\"alignnone size-full\" \/><\/a><\/p>\n<p>Hash &#8211; Serves 6<\/p>\n<p>1 medium onion, diced<br \/>\n1 lb ground beef<br \/>\n2 medium squash, diced<br \/>\n1 medium potato, diced<br \/>\n2 tomatoes<br \/>\n5-7 medium okra, chopped<br \/>\n2 tsp salt<br \/>\n1 tsp fennel lseed<\/p>\n<p>Brown meat<br \/>\nAdd fennel seed and pinch of salt<br \/>\nAdd potato<br \/>\nAdd squash and pinch of salt<br \/>\nAdd onion<br \/>\nAdd okra and pinch of salt<br \/>\nWhen potatoes, onion, and squash are soft, add tomatoes<\/p>\n<p>This can also be served with a poached or fried egg on top.<\/p>\n<p><a href=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3851.jpg\"><img decoding=\"async\" src=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3851.jpg\" alt=\"IMG_3851.JPG\" class=\"alignnone size-full\" \/><\/a><\/p>\n<p>Lastly is my favorite way to eat okra.  No hiding, nothing sneaky, just pure goodness.<br \/>\nI like to season a little, and grill it.<\/p>\n<p><a href=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3861.jpg\"><img decoding=\"async\" src=\"http:\/\/www.thetravelingzipperhead.com\/wp-content\/uploads\/2014\/09\/IMG_3861.jpg\" alt=\"IMG_3861.JPG\" class=\"alignnone size-full\" \/><\/a><\/p>\n<p>Garlic Grilled Okra<\/p>\n<p>10 large pieces okra (sized in 1\/2 lengthwise)<br \/>\n1\/2 tsp salt<br \/>\n1 tsp garlic<\/p>\n<p>Put garlic salt and okra in ziptop bag and shake<\/p>\n<p>Grill 3-4 minutes on each side<\/p>\n<p>Serve with ranch dip, salsa or plain or shamelessly stand over the grill wolfing them down&#8230;.. I mean, that&#8217;s one way to eat them, I&#8217;ve heard&#8230;..<\/p>\n<p>The best part about okra, however, is not that it&#8217;s delicious, or that you can get your family to eat it.  It&#8217;s not even how versatile this little green pod can be.
